Tagliatelle with black truffles is a perfect dish for both lovers of simple food and lovers of sophisticated flavours. It only requires a few ingredients in order not to impair the properties of the truffles and always has a great effect.
If you have not already done so, clean the truffles with a semi-hard brush to eliminate any soil residue and impurities. Cut into thin slices with the appropriate tool.
Cook the tagliatelle in abundant salted water.
In a pan, heat some oil with the crushed garlic. Once warmed up, remove the garlic and add the anchovies cut up into little pieces to dissolve in the oil. Turn off the fire and add the truffles into the flavoured oil. Keep some truffles for garnish.
When the tagliatelle is almost completely cooked, sauté in the truffle oil and serve, adding some pepper and nutmeg to taste. Garnish with the remaining truffles.
