Tortellini with Cream, Pancetta and Saffron

Tortellini with Cream, Pancetta and Saffron

Ingredients
500 g “Tortellini sfogliafine al prosciutto crudo”, 100 g pancetta, 50 g butter, 2 dl cream, 60 g grated Parmigiano cheese, 1 packet of saffron, salt, white pepper, and parsley
Preparation

In a wide pan melt butter and add the pancetta cut into cubes.

Meanwhile, boil the tortellini in abundant salted water, drain al dente, transfer into the pan and sauté with the pancetta. Mix in cream, Parmigiano cheese, a sprinkling of white pepper and the saffron. Stir gently until the sauce is reduced.

Serve the tortellini with more Parmigiano and some parsley.
